15-Minute Meal: Broiled Salmon with Asparagus

If you're short on time, this one's easy to cook (and clean).

Broiled Salmon Fillet With Asparagus
Serves: 4
Cooktime: 15 minutes

Ingredients

  • olive oil
  • sea salt
  • pepper
  • 1 bunch of asparagus
  • 4 (6 ounce) salmon filets (about ½ inch in thickness)
  • I lemon, juiced
  • ½ cup dry white wine
  • 2 ½ tablespoons butter
  • 1 ½ tablespoons honey
  • 2 cloves garlic , minced
  • 1 tsp fresh ginger, minced
  • 1/3 cup parmesan, shredded

Preparation

  • Preheat oven to broil. Make sure your oven rack is on the top shelf (around 6 inches from heating element). Line a baking sheet with aluminum foil and spray with no-stick spray. Set aside. 
  • To prepare asparagus, trim ends off of asparagus spears about 2-3 inches from the bottom. Set on one side of the prepared baking sheet. Drizzle olive oil all over asparagus. Season with sea salt and pepper. 
  • Set salmon filets skin down onto other half of baking sheet. In a saucepan, combine butter, wine, honey, ginger and garlic until butter is melted. Let it simmer for 2 minutes. 
  • Pour half the sauce onto filets. Salt and pepper to taste. Broil until fish is flakey, or approximately 8 minutes. Remove from oven and sprinkle parmesan over vegetables. Serve with the remaining butter wine sauce.
